That's interesting about toast vs. fresh; I wonder what it is about the sourdough that makes you feel that way? Me, unless a loaf is still warm and steamy from the oven, my default preference is for toast.
A weekly loaf of sourdough sounds lovely. Good plan. *g*

I think for me it's something to do with the balance between sponginess and crumbliness, and sourdoughs tend toward the spongy end of the spectrum, so toasting restores some crumbliness.
