I default to toast, except for homemade bread, but most of the bread I buy is sourdough from a local bakery.

I think for me it's something to do with the balance between sponginess and crumbliness, and sourdoughs tend toward the spongy end of the spectrum, so toasting restores some crumbliness.

Yep, that makes sense! All this bread talk is making me hungry. *g* Need to bump sourdough up the to-do list.
